1 cup softened organic butter (unsalted)
1 cup organic brown sugar
½ cup organic sugar
2 organic eggs
1 tsp organic vanilla extract
2 ¼ cups organic flour
1 tsp sea salt
1 tsp baking soda
1 cup organic steel cut oats
1 ½ cups organic oatmeal (not quick cooking)
1 cup organic nuts (sliced almonds, walnut bits or a mixture of the two)
1 cup of crumbled Coffee and Cream Il Morso bites
1. Preheat oven to 375 degrees. Prepare two cookie sheets with parchment paper.
2. In a mixer, cream butter and sugars until light and fluffy. Add eggs and vanilla and beat until well blended scraping the sides of the bow. Add flour, salt and soda and beat until smooth.
3.On a low setting incorporate the oats, nuts and crumbled Il Morso wafers.
4. Drop by rounded teaspoons on the parchment lined cookie sheets. Bake 8 to 10 minutes.
5. Cool cookies on cookie sheet for 5 minutes and then transfer to cooling racks. Reuse parchment lined sheets for the next batch.
